I'll quite often get a massive chicken for the week. Yesterday we had a roast. Tonight is rice with chicken and mango salad, that will include finely sliced raw stringless beans, shaved carrot and a Thai dressing. Tomorrow will be chicken and mushroom pasta bake with the rest of the stringless beans. Thursday will be a jumbo egg fried rice with ginger, Chinese style seasonings, veg and the last of the chicken. I'll often do noodles with chicken and either salad or stir fry or open kebabs on wraps or flat bread with chilli crispy chicken, loads of salad, sour cream, lemon etc. Really stretches our money out at the moment and every dinner feels like a thought about meal rather than left overs.
