It all scales with faith so any head gear that boosts health helps. What level faith are you at? Did you use the physick?

the lightening is sometimes a bit random if it hits or not which is why it works better on the bigger bosses.

If you’ve levelled up faith enough then this can one shot bosses if you get close and fully charge the incantation, works the best on larger bosses.

Incantation: Ancient Dragon's Lightning Strike

Talismans: Lightning Scorpion Charm, Flock's Canvas Talisman, Godfrey Icon, Winged Sword Insignia

Physick: Lightning-Shrouding Cracked Tear/Spiked Cracked Tear 

You have a decent amount of Faith so I'd suggest:

Seal: Gravelstone Seal +25

Incantation: Ancient Dragon's Lightning Strike

Talismans: Lightning Scorpion Charm, Flock's Canvas Talisman, Godfrey Icon, Winged Sword Insignia

Physick: Lightning-Shrouding Cracked Tear/Spiked Cracked Tear 

Neck the physick before going in, use Mohg's Shackle to get up close and a full charge of lightning strike should melt him.

To do that you’d have to do a full play through first stockpiling ammo and then learn all of the enemy positions so the answer is probably yes.
