Fair play. It's currently pretty stable at 21/22 depending on the time of day. The scum has fallen to the bottom of the bucket, so I can see that I'm getting roughly a bubble every 5 seconds. Those bubbles are bringing detritus which is stopping things from settling. I think I'll bottle it off next weekend if it's finished bubbling by then.

Ok I chucked my bucket upstairs to my airing cupboard last night. I checked on it this morning and the temp was below the minimum that the strip thermometer reads, but it def wasn't freezing. It's not bubbling nearly as much, and so the detritus has mostly settled to the bottom :-)

I think I'll be bottling it this weekend.

Is regular cane sugar a good shout for priming bottles? What about maple syrup?

You can use cane sugar and maple syrup for priming. There are plenty of priming calculators around. Are you planning on priming bottles individually? I batch prime straight into the fermenter with boiled (and cooled) dextrose solution with good success.

I'd prime with just regular cane sugar, never had any problems with that. It's such a tiny amount of fermentation that it doesn't really matter.

Do not use a calculator though, give me your e-mail address and I'll e-mail you a sheet explaining how to calculate it yourself. More satisfying, more accurate and lets you understand exactly what is going on.

I understand the process just fine but I'm curious to see how your calculations would come out for this example -

I have 21 litres of beer at 21C my desired CO2 volume is 2.1 and I am using dextrose.

Personally I think it is more important to calibrate your vessel so you know the volume of beer you are priming, the graduations are a rough guide at best!

21 litres of beer at 21C will have 1.8g/L of CO2 in it.

You want 2.1 volumes which is 4.2g/L of CO2.

So the difference you need to make up is 2.4g/L.

Each gram of sugar will produce 0.46g/L of CO2 so you need to prime with 109g of sugar. Will change slightly depending on how much water you dissolve your priming solution in.

This might be a weird suggestion but if anyone is homebrewing and needs some bottles, I've somehow amassed a very large selection of used beer bottles which I would be happy to sell on at a very low low price to anyone willing to come and take them away from my house. ( based in reading )

I've also got a home brew kit I want rid of that has two 5l PET bottles and a tap thing, that is basically the same as the mini kegs of carling you can buy in the supermarkets, as well as the brewing vessel, syphon etc.

I've decided homebrew is just too much effort for me and transferred my energies into making cocktail ingredients.

I bottled my not so pale ale last week, had a taste of one on Saturday as I couldn't wait. Very nice though needs a bit more conditioning. I usually do labels for my brews will print some up when my Zebra label printer at work gets repaired!
